
These Lettuce Boats are a healthy and quick meal that will please even your pickiest eaters! Letting each member of your family to create their own is a fun way to allow for choices.
Prepare marinade in bowl:
½ C. olive oil
¼ C. soy sauce
2 T. balsamic vinegar
2 t. lime juice
2 t. garlic powder
1 t. pepper
1 t. turmeric
Cut 1 lb. of chicken breast in strips or cubes and marinade for ½ hour. Cook in a skillet or on a stovetop grill.
As chicken is cooking, prepare 1 C. of dry brown rice according to package directions. Once the rice is ready, add one 15 oz. can of black beans to warm.
Cut colorful peppers and warm in the skillet or on the grill with the cooked chicken.
Clean 8-16 pieces of iceberg or butter lettuce.
Allowing for your budding chefs to help, use one or two pieces of lettuce, add a spoonful of rice and bean mixture, layer on a bit of chicken, and a few slices of avocado. Top with cheese and ranch dressing, or bit of salsa for a non-dairy option.
